Christmas Pineapple Pecan Cheese Ball
16 oz cream cheese, softened
8 oz can crushed pineapple, well drained
1/4 cup red peppers, chopped
1/4 cup green or jalapeno peppers, chopped
1/4 cup green onion, chopped
1/2 tsp salt
2 cups chopped pecans, divided
Crackers for serving
Directions:
Beat cream cheese in bowl until smooth. Add pineapple, peppers, onion, salt and 1/2 cup pecans. Shape into a ball and wrap in plastic wrap, chill overnight. Before serving, unwrap from plastic wrap and roll in remaining pecans.
