Sometimes my husband doesn't like to eat his veggies… I like
to joke that husbands are a great way to start training for kids. So I like to try to sneak veggies in every now
and then. This Turkey Burger was a great way to get him to eat some nutritious spinach
and not even think about it. The gooey feta really compliments the turkey and
onions, and is such a tasty dinner

Makes 4 patties
Ingredients:
Ingredients:
½ cup diced onion
2 oz fresh spinach
1 lb ground turkey
1 egg
5 oz crumbled feta
4 Hamburger buns
Directions:
1. In hot skillet, add a little olive oil and the diced onions. Saute over medium heat until onions start to caramelize, then add spinach. Make sure to stir the spinach to coat with oil. The spinach is done when it has wilted.
2. In large bowl whisk the egg until beaten. Add ground turkey and mix well, then add spinach and onions. Lastly, add crumbled feta being sure to leave chunks.
3. Shape into 4 equal patties. (Mine were about 6 1/2 oz each) Then add to hot greased skillet and cook for about 6 minutes on each side, until thermometer reads 165°.
4. Serve on bun (or go low carb and enjoy on its own) with your choice of condiments.
Note: You can substitute frozen spinach that is thawed and drained for fresh spinach.
